Viet-Cajun Crawfish Crawl

Somewhere along Bellaire Boulevard in the 1980s, Houston's Vietnamese community took the Cajun crawfish boil — a Louisiana ritual of spice and beer — and rewrote it. They swapped the loose seasoning for a thick, glossy garlic-butter sauce laced with lemongrass, ginger, and enough peppers to make your lips buzz, then tossed the crawfish so every crevice was coated. The result, 'Viet-Cajun' crawfish, is one of the great fusion dishes born on American soil, and Houston is its undisputed capital. This drive threads through the restaurants where the style was pioneered and perfected, most of them clustered in the sprawling Asiatown along Bellaire. Bring a bib, a stack of napkins, and no fear of getting your hands dirty — this is a meal you eat with your fingers, and there's no other way to do it. Crawfish season peaks roughly February through May, but several of these spots fly in live mudbugs year-round.
